It is 99 degrees here today. That’s just ugly hot. I’m not even sure I want to cook today! Ha! Who are we kidding, lets just avoid the oven! How about some no-bake cookies?
You know what I mean…those wonderful little chocolate, peanut butter and oatmeal cookies you used to get from holiday party trays. Those are just what the heat ordered!
You will need:
2 c sugar
1/2 c milk
1 stick of butter
1/4 c unsweetened cocoa powder
3 c old fashioned oats
1 c peanut butter
1 tbsp vanilla
Pinch of salt
In a sauce pan, combine the sugar, milk, butter and cocoa powder. Bring to a boil and let boil for 1 minute. **Don’t skip the boiling for 1 minute step or the cookies will not form and may stay liquid.** Add the vanilla, salt, peanut butter and stir – off heat- until peanut butter has melted. Add your oats and fold together.
I used a #2 ice cream scoop to form the perfect and even balls. Let stand on parchment paper for about an hour before eating to allow the cookie to become firm.
Delicious! I’ve made these little wonderfuls for the lat few parties we have attended and they’re just so stinking easy, take no time, and everyone loves them.
If this were for a kids party, you could also fold in M&M’s or sprinkle the tops with colorful candies. You can also omit the cocoa powder and just add chocolate chips when you add the oatmeal. Or perhaps omit the oatmeal and sub rice crisp cereal. mmmm
